Chemical nature

White powder, tasteless and odorless. Soluble in dilute acid, soluble in water, insoluble in organic solvents such as ethanol, ether and chloroform. Resistant to light and heat, stable in air and hygroscopic.

Applications

Magnesium ascorbyl phosphate (magnesium-1-ascorbyl-2phosphate) is a stabilized, synthetically derived version of vitamin C. It is reported to be as effective as vitamin C in regulating collagen biosynthesis, and as an anti-oxidant.
